The history of Maki

The history of maki goes back many centuries, long before this delicious roll of vinegared rice became one of the iconic symbols of modern Japanese cuisine. The origins of maki are closely linked to the technique of preserving fish in rice, a traditional method known as narezushi.

Narezushi, which first appeared around the 8ᵉ century, involved fermenting fish by wrapping it in rice to extend its shelf life. At the time, rice was not eaten, but only used to preserve the fish by giving it a particular taste due to fermentation. This process, though practical, differs greatly from the makis we know today.

Over the centuries, this method evolved, particularly during the Edo period (1603-1868), when vinegared rice began to be incorporated into direct consumption. It was also during this period that sushi preparation techniques were perfected, and the idea of wrapping ingredients in a sheet of seaweed took shape. The maki sushi, or rolled sushi, became a popular variation. The word maki comes from the Japanese verb maku, meaning to roll, in reference to the way ingredients are rolled in a sheet of seaweed (nori).

In the 20ᵉ century, the introduction of sushi beyond Japan's borders saw the emergence of new variations on maki, which gradually adapted to the tastes of different countries. In the West, new flavors such as cheese, avocado or vegetarian variants appeared, enriching the palette of possible combinations while preserving the essence of this traditional dish.
